Ingredients
  • 4 diced tomatoes
  • 1 sliced carrot
  • 1 sliced stalk celery
  • 1 diced red bell pepper
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon minced garlic
  • ½ cup water (120 mL)
  • 2 tablespoons fresh parsley
Procedure
  1. Add tomatoes, carrot, celery, red bell pepper, salt, pepper, garlic, and water to a large pot and bring to a boil.
  1. Reduce heat, cover, and simmer for 20 minutes, or until vegetables are tender.
  1. Remove from heat, let cool for 10 minutes.
  1. Add mixture to a blender and add in the parsley. Blend until consistency is smooth. Serve!
