• 1 ½ cup brown rice
  • 1 SM Bonus Pineapple
  • 1 teaspoon oil
  • 1 ¼ SM Bonus Shrimp Cooked and Peeled
  • 5 scallions
  • 1 chili pepper
  • 3 minced garlic
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce

1. In a medium pot, cook brown rice according to package directions. Set aside.

2. Cut pineapple in half and hollow out both halves to make pineapple bowls. Then cut the pineapple into small pieces. Set aside.

3. Using frying pan, add oil and peeled shrimp. Cook for 5 minutes. Sauté scallions, chili pepper and garlic cloves. Add cooked brown rice, 1tbsp soy sauce and 1tsp fish sauce. Stir and cook for 1 minute.

4. Transfer into the hollowed-out pineapples. Garnish with spring onion and pineapple bits.
