• 1 whole chicken (cut into pieces)
  •  250g baby potatoes
  • 1 sliced pumpkin
  • 1 red onion
  • 1 teaspoon pepper
  • ½ kg tomatoes
  • 1 tablespoon green pesto
  1. Preheat the oven to 180°C.
  1.  In a roasting pan, spread baby potatoes, sliced pumpkin, red onion, pepper and tomatoes. Lay chopped chicken on top of the vegetables.
  1. Mix olive oil and green pesto and spoon evenly over the chicken. Cover with foil and cook for 30 minutes.
  1. Remove foil from the pan and cook for another 10 minutes.
