Ingredients:
  • 450g shrimp
  • 3 tablespoon oil
  • 3 cloves garlic
  • 1 cup lemon juice
  • 1 tablespoon minced rosemary
  • 1 teaspoon chili flakes
  • 1 teaspoon pepper
  • 1/2 pineapple chunks
  • fresh mint
  • sliced cucumber
Procedure:
  1. In a large bowl, combine oil, garlic, lemon juice, minced rosemary, chili flakes, salt and pepper.
  1. Add shrimp and toss to coat shrimp evenly.
  1. Place mixture in the refrigerator and marinate for 30 minutes.
  1. Thread the shrimp, pineapple chunks and fresh mint. Add stripped rosemary springs at the top of the skewer for garnish and flavor.
  1. Grill skewers for 3 minutes each side.
  1. Best served with fresh sliced cucumber.
