Ingredients:
  • 500g chicken breast
  • 1 cup flour
  • 1 lemon zest
  • 2 tablespoon pepper
  • 2 tablespoon olive oil
  • 1/4 cup butter
  • 1 cup chicken broth
  • 1 ½ tablespoon lemon juice
  • 1/2 cup white wine
  • 3 tablespoon green olives
  • ½ teaspoon parsley
Procedure:
  1. In a large bowl mix flour, lemon zest, salt and pepper then coat chicken in the mixture.
  1. Over a medium high heat, add olive oil and cook chicken for 5 minutes each side. Set aside.
  1. Using the same pan, add butter and flour. Cook for 3 minutes.
  1. Add chicken broth, lemon juice, white wine and green olives. Simmer for 3 minutes.
  1. Add cooked chicken to the pan and simmer for 5 minutes. Sprinkle ½ teaspoon of parsley. Best served with pasta.
